Does seitan contain gluten?
Yes. Seitan is wheat gluten: it does not contain gluten, it is gluten. It is made by kneading wheat flour and washing it until only the protein part is left, which is precisely the gluten. There is no gluten-free version of seitan, because it would be something else.
