Does cured meats contain gluten?

It depends. Whole dry-cured meats — prosciutto, speck, bresaola — normally contain no gluten. Cooked and emulsified ones can, because starches and vegetable proteins are used as binders. And at the counter, the slicer is the same one that cut something else a moment earlier.
